Ingredients for Chicken Biryani
For Chicken Marination
- 1 kg chicken (with bone preferred)
- 1 cup yogurt (thick)
- 2 tablespoons ginger-garlic paste
- 2 teaspoons red chili powder
- 1 teaspoon turmeric powder
- 2 teaspoons biryani masala
- 1 teaspoon garam masala
- Salt to taste
- Juice of 1 lemon
- Handful of chopped mint leaves
- Handful of chopped coriander leaves
For Rice
- 3 cups basmati rice
- Water for boiling
- 2 bay leaves
- 4 green cardamom pods
- 1 cinnamon stick
- 1 teaspoon cumin seeds
- Salt to taste
For Biryani Layers
- 3 large onions (thinly sliced)
- ½ cup cooking oil or ghee
- ½ cup warm milk
- A pinch of saffron strands (optional)
- 2 green chilies (slit)
- Extra mint and coriander leaves
Step 1: Marinating the Chicken
Marination is the foundation of flavorful biryani. In a large bowl, combine chicken with yogurt, ginger-garlic paste, spices, lemon juice, salt, mint, and coriander. Mix well until every piece is coated evenly.
Cover and refrigerate for at least 2 hours, but for best results, marinate overnight. This allows the chicken to absorb the spices deeply and remain juicy after cooking.
Step 2: Preparing the Rice
Wash the basmati rice thoroughly until the water runs clear. Soak it for 30 minutes — this helps the grains cook evenly and stay long.
In a large pot, bring water to a boil and add whole spices, salt, and soaked rice. Cook until the rice is 70% done (slightly firm in the center). Drain immediately and set aside. Overcooking rice at this stage can ruin the biryani texture.
Step 3: Frying the Onions
Heat oil or ghee in a heavy-bottom pot. Add sliced onions and fry on medium heat until golden brown and crispy. Remove half of the fried onions and set them aside for garnishing.
These caramelized onions add sweetness and depth to the biryani, so don’t rush this step.
Step 4: Cooking the Chicken
In the same pot with remaining onions and oil, add marinated chicken. Cook on medium heat for 10–15 minutes, stirring gently. The chicken should release oil and form a thick, rich masala.
Add green chilies and adjust salt if needed. Do not overcook the chicken, as it will continue cooking during layering.
Step 5: Layering the Biryani
Turn the heat to low. Spread half of the rice evenly over the chicken masala. Sprinkle fried onions, mint, coriander, and saffron milk.
Add the remaining rice as the final layer. Top with the remaining fried onions, herbs, and a drizzle of ghee or oil for extra aroma.
Cover the pot tightly with a lid (or seal with dough) and cook on low heat for 20–25 minutes. This slow steaming process, known as dum, allows all the flavors to blend perfectly.
Step 6: Serving the Biryani
Once done, turn off the heat and let the biryani rest for 10 minutes. Gently fluff with a wide spoon to avoid breaking the rice grains.
